Fall Caprese Salad

Yield: serves 4

Ingredients:

2 balls mozzarella

2 apples sliced thin

2 carrots sliced thin

1/2 butternut squash seeds removed and sliced

2 tablespoons maple syrup

2 tablespoons quark cheese

3 tablespoons olive oil

1 teaspoon lemon juice

salt and pepper to taste

Method:

  1. Preheat oven to 350 degrees, arrange sliced squash on parchment lined baking sheet. Drizzle with 1 tablespoon olive oil, salt and pepper. Roast 20-30 minutes until cooked through.

  2. For the dressing combine maple syrup, quark cheese, lemon juice, olive oil and salt and pepper.  Taste for seasoning may need to add more salt or lemon juice.

  3. On a serving plate arrange the roasted squash, apples and carrots, drizzle with salad dressing.
