Spicy Maple Roasted Apple, Squash and Carrot Soup

Creamy, spicy and sweet, the prefect comfort soup!

Yield 6 servings

Ingredients:

2 crown prince squash seeds removed peeled and chopped

2 apples peeled and chopped

4 carrots peeled and chopped

1 litre chicken or vegetable stock

1 teaspoon smoked paprika

1 tablespoon salt

2 tablespoons olive oil

2 tablespoons maple syrup

2 tablespoons quark cheese

Method:

  1. Preheat oven to 350 degrees. Place the squash, apples and carrots on a parchment lined baking sheet. Drizzle with 1 tablespoon of olive oil and season with 1 teaspoon salt, smoked paprika and maple syrup. Roast for 30 minutes until the vegetables are caramelized.

  2. Transfer the vegetables to a blender and add vegetable stock. Blend until smooth.

  3. Add quark cheese and blend soup for another minute. Season to taste.
