Banana Bread

Yield: 1 loaf pan 

Ingredients:

1 ½ cups Flour

1 ¼ teaspoon Baking soda

¾ teaspoon Salt

1 cup Sugar

2 Eggs

½ cup Plain yogurt

4 tablespoons Butter

1 teaspoon Vanilla 

½ teaspoon cinnamon

4 ripe bananas mashed 

1 banana (for garnish) sliced lengthwise

3 tablespoons brown sugar

Method:

  1. Preheat oven to 350 degrees.

  2. Using a nonstick spray generously coat the loaf pan.

  3. In a large bowl sift the flour, baking soda, salt, and cinnamon, and set aside. 

  4. Using an electric mixer mixer with the paddle attachment cream the butter and sugar for 5 minutes until light in colour and fluffy.

  5. Add eggs one at a time, mixing well between each addition.

  6. Add vanilla and mix for 30 seconds. 

  7. Add flour mixture in two additions and mix for 1 minute. Refrain from over mixing.

  8. Add 4 ripe bananas and mix for an additional minute. 

  9. Transfer the mixture to a loaf pan. 

  10. Arrange sliced bananas on top.

  11. Sprinkle with brown sugar.

  12. Bake for 50 minutes, remove from the oven, and let cool on a wire wrack.
