Squash, Apple and Carrot Puff Pastry Tarts

This tart is perfect for serving as an appetizer, or pair with a side salad for lunch!

Yield: 6 pieces

Ingredients:

1 sheet Puff pastry

2 Carnival squash seeds removed peeled and sliced thin

3 carrots peeled and sliced thin

2 apples seeds removed, peeled and sliced thin

1 cup quark cheese

2 sprigs thyme

1/4 cup maple syrup

Method:

  1. Preheat oven 350 degrees.

  2. Cut puff pastry into 6 even squares.

  3. Cut a 1/2 inch border around each individual square.

  4. In a bowl combine the quark cheese, 1 sprig of thyme salt and pepper, stir to combine.

  5. Spread the quark cheese in the center of each piece.

  6. Arrange the squash, apples and carrots in a single overlapping inside of the border.

  7. Bake for 20-30 minutes until puff pastry is golden brown.

  8. In a sauce pan on low heat add the maple syrup, remaining thyme and 1/2 teaspoon salt, bring to a low simmer.

  9. While still warm, brush the baked tart with maple glaze.
