Butter board- roasted garlic, honey, lemon & thyme

Butter boards are a fun way to customise butter. The whipped butter is easy to spread and can be served with any type of bread or crackers. I like serving this butter with my grape and thyme focaccia!

Ingredients:

1/2 cup butter room temperature

1 head garlic

1 lemon zested

4 sprigs thyme

2 tablespoons honey

Course salt

Method:

  1. Preheat oven to 350โ€™ degrees. Cut the top off the head of garlic, wrap in tin foil and bake for 25 minutes.

  2. Using a hand mixer or stand mixer with paddle attachment whip butter for 5 minutes on medium high speed until light and fluffy.

  3. Remove the garlic from the skins and add to whipped butter. Mix another 2 minutes to incorporate.

  4. Line a cutting board with parchment paper. Using an off set spatula spread the butter in a 1/2 inch single layer.

  5. Sprinkle with thyme, lemon zest, honey and course salt. Serve at room temperature.
