Cabbage Apple Chicken Tray Bake

A fall favourite! This classic comfort food recipe takes minutes to prepare and comes together in the oven.  Make this vegetarian by switching out the chicken for tofu or chickpeas. 

Yield 4 servings 

Ingredients:

8 boneless chicken thighs

1 red cabbage shredded 

1 apple cored and sliced 

1 red onion sliced 

5 cloves garlic peeled 

1/2 teaspoon paprika

1/2 teaspoon garlic powder 

1 tablespoon salt 

1.5 tablespoons olive oil 

1 cup plain yogurt

1 tablespoon dijon mustard 

2 tablespoons dill chopped plus more for garnishing 

Method:

  1. Pre-heat oven to 375.

  2. On a parchment lined baking sheet arrange the cabbage, apples, garlic and onions in a single layer.

  3. Season with garlic powder, paprika, 1 tablespoon olive oil and 1/2 tablespoon salt.

  4. Arrange the chicken things on top of the cabbage, season with remaining salt and olive oil.

  5. Bake for 30 minute until chicken is golden brown and cooked through.

  6. In a mixing bowl combine yogurt, dill, dijon and season to taste with salt and pepper.

  7. Serve baked chicken and cabbage with dill yogurt sauce, garnish with dill and ENJOY!
